Engagement/Wedding/Hantaran Cupcakes!

Hello Everybody!

Sorry la saya ni selalu lambat sangat nak meng'update'..But here it is now. My most anticipated and exciting project ever.. Wedding/engagement cupcakes! or cupcakes for hantaran as we malays would call it. I've always wanted to do them and I suddenly had 3 orders of them last week. wow! Alhamdulillah, rezeki tuhan bagi. Anyways, for those of you who don't know (I do have some foreign readers occasionally), hantaran are actually gifts that are exchanged between the bride and groom.

For the first order, the customer wanted something simple, sweet yet colourful. So we made daisies for her!

Next, the customer wanted something pastel..so we made pink roses with their initials.. The pink and white ones marked S&I are just extras..

I have no clue why this picture turned blue.hmmf.

And last but not least, my friend Milya ordered some cupcakes for her "Merisik". Merisik is the malay version of the guy standing on one knee proposal. We malays bring the whole family together for this...And again there are gifts involved..I just love our malay culture, don't you? ;)

The fondant hantaran cupcakes are priced at RM60 for 12pcs and RM80 for 16pcs. I'll update the prices on the side soon..

Ayan & Mama goes to Summit USJ..

Hi everybody! We're going to be at the Summit USJ Flea Market this Saturday, 12 Dec 2009! I'm still finalizing some things like paying the rental fee and etc, but I think its confirmed already. So if you're not doing anything this saturday, do come over and pay us a visit! We're planning to sell popcakes and other foods like candy apples! mmm nyumm!

BFF's Birthday

Last Friday was one of my bestfriend's birthday. So of course I made birthday cupcakes for her! My mama made some awesome ones too especially for the birthday girl, but I was rushing and I forgot to snap pics of them. Sorry Mum. It was a surprise birthday party planned by her boyfriend who is all the way in the US. He couldn't be here in Malaysia for her birthday so he made arrangements for her to celebrate it with her close friends instead. aww ain't that sweet? The birthday girl didn't suspect anything because it was actually a few days after her birthday. Jeng Jeng Jeng...

I'm baaaaccckk!

Hello everybody! I missed blogging! I've been a bit busy lately so I havent had the time to bake or blog that much. Sorry loves! Anyways, I'm back now and I have a few things to share with you..

Firstly, I know I said that I was going to post something about croissants. But like I said, I've been quite busy so I'll try making that another time ok. Anyways, I attended a franchise seminar just recently. That was a really great experience. I met great people, learned a lot and had tons of fun! Towards the end of the 2 week seminar, I decided to bake a bit for my friends since one of them had asked to try my cupcake. I brought it over to the hotel and the 7 of us sat down at the hotel cafe munching the cupcakes while chit chatting. It was great. Click Click!

Other than that, yesterday was my friend's birthday. So naturally, his girlfriend asked me to bake some cupcakes for his surprise birthday party (not really party la, more of a get together). This is one of my favorite projects because it had a more personal touch to it. Happy birthday Shapiq!

Arissa wants rainbow coloured polka dots on her birthday cupcakes, so thats what we gave her! or at least we tried..Happy birthday Arissa! Thanks to Arissa's mummy, Kak Nerry for choosing us to make her daughter's birthday cupcakes!

Red Velvet mmmmm...

Hey everybody! I finally made a red velvet cake and now I'm gonna make a tutorial for you! Before that, I bet some of you haven't even heard of a red velvet cake. I didn't know what it is before either. But I kept seeing it on american baking blogs and I was so curious to know how it tasted. Now I think I know how it got that name. Because it's really red and it tastes so rich and smooth like velvet! So enough of babbling, here's the recipe (I got it from here):

RED VELVET CAKE

2 1/2 cups (250 grams) sifted cake flour
1/2 teaspoon salt
2 tablespoons (15 grams) Dutch-processed cocoa powder

1/2 cup (113 grams) unsalted butter, at room temperature
1 1/2 cups (300 grams) granulated white
sugar (castor sugar lah)
2 large
eggs
1 teaspoon pure vanilla extract
1 cup (240 ml) buttermilk (kalau takde, boleh buat sendiri. click here)
2 tablespoons liquid red food coloring
1 teaspoon white distilled vinegar
1 teaspoon baking soda


My recipe is colour coded so that its easy for you to see the steps and what goes together. So heres how you make it:

  1. Preheat oven at 175c.
  2. Sift blue items together in a mixing bowl and set aside
  3. Next comes the orange part. In a mixer, beat butter until soft. Add sugar and beat until fluffy. Add eggs one at a time and beat well. Scrape sides of bowl. Then add vanilla extract and beat until combined.
  4. Next, in a separate bowl, whisk red items.
  5. In mixer (with the orange mixture), alternately add the blue and red mixture, in three additions, beginning and ending with the blue or flour mixture.
  6. Lastly, combine green items together. Allow it to fizz for a while before quickly FOLDING it into the cake batter.
  7. Butter a 9 inch pan and line the bottom with baking paper. pour the cake mix into the pan and bake in preheahted oven for 25-30mins. Maybe longer if you use the normal burner type of oven instead of a convection oven like i do.

When its done, cool it off on a rack, and cut across in half. Maybe the colour doesn't show that well in the picture, but its red okaayy..



How to make cream cheese frosting: Mix 250g of cream cheese with 5 tbsp butter, 2 tsp vanilla, and gradually add 2 cups of icing sugar. lesser sugar if you don't like it too sweet.

Put a dolop of the cream on the cake half...


..and spread.


I forgot to take a picture, but just place the 2nd half on top and smooth out more cream..Nice and smooth and ready to be eaten!

The red isn't that apparent on my cake since i reduced the coloring a bit. and because it half chocolate..
